This series from famed Blade-smith, Tadashi Enami exemplifies art and science with true craftsmanship. Kuro, meaning black in Japanese is referenced in the Kurouchi style knives. It is a black iron oxide coating left from the forging process, which helps prevent rusting. These single-bevel knives also feature a hammer texture (Tsuchime), which helps food release from the blade. Forged in the classic Kasumiyaki construction, and made from a white #2 high-carbon steel core and soft black iron cladding, which gives this series its unique look. A Kiritsuke Yanagi has a long slender blade and single-bevel which makes for cutting sushi, sashimi and rolls effortless and precise. 

NOTE: Blade may rust if left wet, this is NOT a stainless steel.
