This Kikuichi AUS-10 Sujibiki is hand-crafted incorporating high carbon molybdenum, creating a thin but stiff blade. Kikuichi’s blade-smiths also use vanadium, promoting a fine grain structure. A Sujibiki is a superior slicing knife. Its long and narrow blade assist in slicing meat, fish and vegetables with accuracy and ease. Ultimately, this AUS-10 series offers blades that are easy to sharpen, and have good edge retention. The resin handles are a full tang design that is comfortable, durable and heat resistant.
