This Yoshihiro Petty Knife is a versatile utility blade slightly larger than a paring knife, ideal for intricate, delicate, and light tasks. Unlike paring knives, petty knives are commonly used on a cutting board for precision work.
Crafted with a sanmai hybrid blade, this knife offers the best of both worlds. Its core consists of Yasuki grade Blue #2 high-carbon steel sandwiched between layers of SUS-410 stainless steel. This unique construction provides a hard cutting edge, achieving a razor-sharp edge that lasts, while maintaining the convenience and durability of stainless steel.
