Under the expert craftsmanship of Shosaku Motomiya, Ryujin produces exceptional knives celebrated for their sharpness and practical design. The Naguri series is distinguished by handles inspired by the traditional Japanese Naguri woodcutting technique, featuring a unique stippling pattern achieved through meticulous chisel work. These 18-8 stainless steel handles are carefully sculpted to complement the Inox Molybdenum blade, resulting in a lightweight, well-balanced kitchen tool with a natural, comfortable grip. The combination of Chromium, Molybdenum, and Vanadium in the blade’s construction ensures excellent edge retention and ease of sharpening.

The Kaku-Honesuki, traditionally a Japanese poultry boning knife, has evolved into a versatile tool for various boning tasks, including Frenching racks of lamb. Its design features a thicker spine, wide heel, and narrow tip, allowing for precise separation at joints and cartilage. It also performs exceptionally well when working with smaller fish like Aji, Kodai, and Kohada.
