Join Chef Elan Wenzel for a hands-on knife sharpening class where you'll learn the fundamentals of sharpening and care for the equipment, including learning how to create a 50:50 symmetrical double-bevel edge, honing it to razor-sharp precision, and maintaining sharpness over time.
Classes are held typically once every month, always on a Wednesday at 6:45pm.
Each class lasts approximately 2.5+ hours.
The class takes place at our shop in the LoHi neighborhood in Denver, 1701 Platte Street, Suite #171, Denver, CO 80202.
We supply the knife and sharpening stones. We only require that you wear close toed shoes for safety on the off chance someone drops a knife or sharpening stone.
The class is $95 per person.

Wear clothes you don’t mind getting dirty or bring your own apron. Wear shoes that are comfortable as you'll be standing for 2.5+ hours on a concrete floor. Close-toed shoes are required for safety.

The class instruction covers the fundamentals of knife sharpening, emphasizing pressure and angles. You will also receive instruction on knife anatomy, blade geometry, different knife types, care of sharpening stones and knives, assessment of the knife, general safety, proper form and stance, establishing bevels, refining the edge, and testing for sharpness.
The class includes both group instruction for key sharpening techniques and individual guidance to ensure personalized attention and hands-on practice.
Yes, this is a hands-on class where you'll sharpen a knife provided for practice, along with sharpening stones and all necessary equipment.

No prior experience is needed. The class is designed for both beginners and those with some sharpening knowledge.
Feel free to bring your questions to the class. Chef Elan will address them during the session.

You’ll gain skills in creating and maintaining a sharp edge, understanding knife anatomy and geometry, and applying proper sharpening techniques. We also recommend practicing soon after you take the class while the information is still fresh in your mind…PRACTICE, PRACTICE, PRACTICE! Remember to keep patient and don’t allow yourself to become discouraged. Knife sharpening by hand is a technical skill that requires patience and consistent effort to master.
The frequency of sharpening depends on how often you use your knife and the types of tasks it performs. Regular honing will help maintain the edge between sharpening sessions. You can choose to sharpen more frequently, which reduces the effort needed in each session, or sharpen less often, which might require a more involved process to reestablish the bevel and restore the blade's sharpness.
