This Kikuichi AUS-10 Gyuto is hand-crafted incorporating high carbon molybdenum, creating a thin but stiff blade. Kikuichi’s blade-smiths also use vanadium, promoting a fine grain structure. A Gyuto (Chefs Knife) is the most versatile knife a chef can own. It enables confidence while preparing fish, meats and vegetables. Ultimately, this AUS-10 series offers blades that are easy to sharpen, and have good edge retention. The resin handles are a full tang design that is comfortable, durable and heat resistant.
