This Kikuichi AUS-10 Sujihiki is hand-crafted incorporating high carbon molybdenum, creating a thin but stiff blade. Kikuichi’s blade-smiths also use vanadium, promoting a fine grain structure. A Sujihiki is a superior slicing knife. Its long and narrow blade assist in slicing meat, fish and vegetables with accuracy and ease.
