One of our most popular series of knives, the 45 layer Nickel Warikomi Damascus is beautiful and functional and will be the showpiece of any kitchen. Kikuichi blade-smiths construct this series with a core of Aichi AUS-10 stainless clad between 11 layers of nickel, 6 layers of SUS420 and 5 layers of J1 stainless steel, creating the damascus pattern. These have a thin blade and a light agile feel. The Japanese Rosewood Octagon handle is comfortable and durable. Nakiris are typically a double bevel knife specifically designed to work with vegetables. The design is derived from the Japanese single bevel Usuba with a very thin spine, squared tip, wide and straight profile.
