This SG2 Gyuto from Naohito Myojin is a striking expression of contemporary Japanese craftsmanship grounded in traditional technique. The blade is meticulously hand-sharpened and finished with a refined Sokasumi (mist) polish by Myojin-san himself, whose work has gained international recognition for its precision, elegance, and performance. The misty Sokasumi finish not only adds to the knife’s visual appeal but also reduces drag during cutting, allowing the blade to move effortlessly through ingredients.

At its core is SG2 stainless powder steel, heat-treated to an impressive 65 HRC and clad in stainless for added durability and ease of maintenance. This high-performance steel takes a remarkably fine edge and retains it exceptionally well, making it ideal for precise, detail-oriented work. Myojin-san applies a delicate convex grind that enhances cutting feel and blade stability while contributing to the knife’s sleek, responsive geometry.

Signature to Myojin’s finishing work, the spine and choil are carefully rounded and polished by hand, ensuring comfort during use—especially in a pinch grip. The blade is matched with an octagonal oak handle featuring a textured Suigin (silver lacquer) finish, which brings a refined, modern aesthetic and fantastic grip. Lightweight and balanced, this gyuto is equally at home in a professional kitchen or the hands of a passionate home cook.

With its slightly curved profile and agile tip, the gyuto is an incredibly versatile tool, suited for a wide variety of kitchen tasks—from slicing proteins and breaking down vegetables to fine prep and detail work. The edge glides with precision, making every cut feel intentional and clean.

Naohito Myojin began his knifemaking journey at the age of 18, initially drawn to forging before transitioning to the art of sharpening under the mentorship of his father, Tateo Myojin, in their family-run workshop Myojinriki Seisakusho in Kochi, Japan. Though originally hesitant to join the family trade, a single compliment on his sharpening work sparked a passion that would evolve into a remarkable career. Today, Naohito brings fresh vision to the legacy of his father’s work and has recently launched his own brand, Tetsujin Knife Labo (鉄人刃物ラボ), continuing the tradition with new energy and refined techniques.
