Hon Kasumiyaki is a traditional style of blade construction for single-bevel knives. Hand forged in the sword making tradition from two pieces of steel, the Sakai Ichi, 堺 一  Kasumiyaki series are ideal knives for chefs wanting a higher level of quality.

Gin-san, also known as Ginsanko is a high performing stainless steel. Sakai Ichi master blade-smiths use traditional forging methods mixed with modern techniques and strengthening elements of Carbon, Chromium, Manganese, Phosphorus, Sulfur and Silicon. The result is a knife that sharpens with ease and holds its edge.
