Hand forged by Colorado bladesmith Dakota Thornton of Kota Knives, the Tomanowos Gyuto blends performance-driven geometry with a design inspired by one of North America's most significant meteorites. The name Tomanowos references the sacred meteorite of the Clackamas people, often translated as "visitor from the sky," paying tribute to a remarkable piece of natural history while reflecting the forged nature of the blade itself.
Forged from a single piece of ProCut carbon steel and heat treated to approximately 63 HRC, this Gyuto is built for exceptional cutting performance, edge stability, and long-term edge retention. The mono-steel construction provides a direct connection between steel, heat treatment, and cutting feel, allowing the blade to deliver the responsive feedback and sharpening characteristics that carbon steel enthusiasts appreciate.
The 210mm Gyuto profile serves as a versatile kitchen workhorse capable of handling vegetables, proteins, herbs, and general prep with ease. A subtle S-grind geometry paired with a slight convex grind helps the blade move efficiently through ingredients while improving food release and reducing drag during longer prep sessions. The result is a knife that feels thin and precise through product without sacrificing stability on the board.
A retained forge finish along the upper portion of the blade preserves a visual connection to the forging process, giving each knife unique character while highlighting its handcrafted origins. The octagonal Japanese wa handle provides a lightweight, balanced feel in hand, keeping the knife agile and responsive during extended use.
