Hand forged in Boulder County, Colorado by bladesmith and ABS Journeyman Smith Jayden Simisky, better known as The Slacksmith, this Gyuto reflects a philosophy rooted in craftsmanship, performance, and the enduring appeal of forged steel. A winner of History Channel's Forged in Fire, Simisky is known for producing knives that blend traditional forging techniques with highly functional kitchen-focused design. He forges all of his blades by hand and has spent years refining his approach to metallurgy, geometry, and performance-driven craftsmanship.
Forged from a single piece of 1075 high-carbon steel, this Gyuto embraces the simplicity and performance that have made plain carbon steels favorites among bladesmiths for generations. Rather than relying on large amounts of alloying elements, 1075 develops its cutting performance through proper forging, heat treatment, and geometry. Heat treated to 63 on the HRC Rockwell scale, the blade offers excellent edge stability, keen sharpness, and a responsive feel on the stones.
The 210mm Gyuto profile serves as a highly versatile kitchen workhorse capable of handling vegetables, proteins, herbs, and general prep with ease. A subtle convex grind improves food separation while maintaining excellent cutting efficiency, allowing the blade to move cleanly through ingredients with minimal resistance. The remaining forge finish preserves a visual connection to the forging process, giving each knife a unique character while highlighting its handcrafted origins.
The octagonal rosewood wa handle paired with an ebony pakkawood ferrule keeps the knife lightweight and responsive in hand. Combined with the forward balance common to traditional Japanese handle construction, the knife feels agile, precise, and comfortable through extended prep sessions.
This is not a mass-produced knife built to a formula. It is the work of a Colorado bladesmith who forges, grinds, heat treats, and finishes his blades by hand, producing functional tools intended to be used, appreciated, and maintained for years to come.
