The Touroku Sakai Hammered Kiritsuke Gyuto combines traditional Sakai craftsmanship with a flatter, more precision-focused blade profile designed for highly controlled kitchen work.

Handcrafted in Sakai, Japan, this series features a Blue Super carbon steel core clad in stainless steel using a traditional Sanmai construction. Blue Super steel is highly regarded for exceptional edge retention, refined cutting feel, and its ability to take an extremely sharp edge while maintaining long-term performance. The stainless cladding helps reduce maintenance while preserving the responsive feel and cutting characteristics carbon steel enthusiasts appreciate.

The Kiritsuke Gyuto profile blends the versatility of a Gyuto with a flatter edge line and angled K-tip for increased precision and control. It excels at push cutting, slicing, trimming, and detailed prep work while still remaining highly versatile for everyday kitchen use.

The hammered tsuchime finish adds texture and visual depth to the blade while also helping improve food release during prep. The blade geometry feels thin and efficient through ingredients while maintaining good stability and control on the board.
