This Nakiri stands apart from many traditional vegetable knives thanks to its notably thin S-grind geometry and highly efficient cutting feel.
Built around a Blue Super carbon steel core clad in stainless steel, it delivers excellent edge retention with easier day-to-day maintenance than a fully reactive carbon blade. The blade geometry is the real highlight here. Thin behind the edge with subtle S-grind characteristics through the blade face, it moves through dense vegetables and taller ingredients with very little resistance while also improving food release and maintaining stability on the board.
The flatter Nakiri profile keeps full contact with the cutting board for clean push cuts, chopping, and repetitive prep work. Despite the thin geometry, the blade still feels controlled and confident during use.
Fitted with a western Pakkawood handle, the knife remains lightweight, nimble, and comfortable through longer prep sessions.
