Taka Kitano leads Touroku Sakai, continuing a three-generation family legacy while working with skilled craftsmen throughout Japan. The CroMoV Sanshi Series brings that Japanese knife-making tradition into an approachable, easy-care format designed for everyday cooking.
The Gyuto is the Japanese interpretation of the Western chef knife and one of the most versatile knife profiles in the kitchen. Designed to move comfortably between vegetables, proteins, herbs, fruit, and general prep, it provides the versatility needed to serve as a primary kitchen knife for both professional chefs and home cooks.
Made from CroMoV stainless steel and hardened to approximately 59 HRC, the blade offers a balanced combination of edge retention, corrosion resistance, toughness, and straightforward sharpening. Mono-steel construction and a full-flat grind create an efficient cutting profile without pushing the geometry into unnecessarily delicate territory.
The blade profile supports push cutting, slicing, draw cutting, and light rocking, making the Sanshi Gyuto adaptable to different ingredients and cutting techniques.
Available in 210mm, 240mm, and 270mm, each size offers a different balance of maneuverability and cutting length. The 210mm is an exceptionally versatile everyday size, the 240mm provides additional reach and slicing efficiency, and the 270mm offers maximum cutting length for larger ingredients, proteins, and higher-volume prep.
Each blade receives a clean Migaki medium-polish finish and is fitted with the series' signature octagonal mono-oak Japanese wa handle finished in Sanshi purple lacquer. The lightweight handle helps maintain a nimble, responsive feel despite the increasing blade lengths.
