The Touroku Sakai HAP40 Gyuto combines traditional Sakai craftsmanship with one of the highest performing modern blade steels used in Japanese kitchen knives today.

Handcrafted in Sakai, Japan, this series features a core of HAP40 semi-stainless powdered metallurgy steel clad in stainless steel for improved corrosion resistance and easier day-to-day maintenance. HAP40 is widely respected for exceptional wear resistance and edge retention, allowing the knife to maintain a sharp working edge significantly longer than most traditional knife steels while still delivering a highly refined cutting feel.

The Gyuto is the Japanese equivalent of a chef’s knife, designed to handle a wide range of kitchen tasks including vegetables, proteins, herbs, and larger prep work. Its profile supports push cutting, slicing, and controlled rocking motions while maintaining a highly versatile feel across different cutting techniques and ingredients. It is an excellent balance of agility and versatility.
