Taka Kitano leads Touroku Sakai, continuing a three-generation family legacy while working with skilled craftsmen throughout Japan to preserve and advance the tools of Japanese culinary tradition.
These traditional Moribashi plating chopsticks are crafted in Sakai City, Japan by Akimasa Ohe, a second-generation Sakai craftsman with more than 30 years of experience in the Japanese cutlery industry. Known for his meticulous handle fitting and hand engraving, Ohe-san brings the same attention to detail found in fine Japanese kitchen knives to one of the most precise tools used in professional plating.
Moribashi, also traditionally known as Manabashi, are specialized Japanese chef's chopsticks designed for the delicate placement, adjustment, and presentation of food. Their slender stainless steel tips provide far greater precision than standard wooden chopsticks, allowing chefs to position garnishes, herbs, individual ingredients, and finishing elements exactly where they belong without unnecessarily disturbing the rest of the plate.
The fine tips are particularly useful for Japanese cuisine, sushi presentation, kaiseki, pastry work, fine dining, and any plating application where accuracy and control matter.
