Taka Kitano leads the renowned Touroku Sakai, continuing a family legacy of Japanese knife making that spans three generations. Built in Sakai, Japan, Touroku Sakai knives are known for blending traditional craftsmanship with highly functional, performance-focused design.

The Gyuto is the Japanese equivalent of a chef’s knife and serves as the primary workhorse in many kitchens. Designed to handle a wide range of tasks including vegetables, proteins, herbs, and larger prep work, the Gyuto balances versatility, efficiency, and precision in a highly approachable format.

At the core of the blade is Blue Super carbon steel, one of the most respected high-performance Japanese steels available. Known for exceptional edge retention, refined cutting feel, and its ability to take an extremely sharp edge, Blue Super performs exceptionally well during long prep sessions while maintaining excellent cutting performance over time. Stainless steel cladding helps simplify maintenance while preserving the responsive feel and feedback that make carbon steel knives so rewarding to use.

The blade geometry feels thin and efficient through ingredients while maintaining enough structure and stability for confident everyday use. The profile supports push cutting, slicing, and controlled rocking motions while remaining highly adaptable across different cutting techniques and ingredients.

Available in multiple sizes, the 180mm version offers a more compact and nimble feel for smaller workspaces and lighter prep tasks, while the 210mm and 240mm versions provide additional slicing length and efficiency for larger ingredients, proteins, and higher-volume prep work.

Fitted with an octagonal mono oak handle finished in traditional Yakiurushi lacquer, the knife remains lightweight, balanced, and comfortable through extended prep sessions. The heat-cured lacquer deepens the tone of the oak while improving durability and grip over time.

For cooks looking for a versatile Japanese chef’s knife with exceptional edge retention, refined cutting performance, and traditional Sakai craftsmanship, the Touroku Sakai Blue Super Gyuto offers an excellent balance of performance, control, and everyday usability.

Note: This Knife has an exposed core of Blue Super carbon steel, which is not stainless. Please follow care instructions for Carbon Steel here.
