Taka Kitano leads the renowned Touroku Sakai, continuing a family legacy of Japanese knife making that spans three generations. Built in Sakai, Japan, Touroku Sakai knives are known for blending traditional craftsmanship with highly functional, performance-focused design.

The Kiritsuke Gyuto combines the versatility of a traditional Gyuto with a flatter edge profile and angled K-tip designed for more precise, controlled cutting. The result is a knife that excels at push cutting, slicing, trimming, and detailed prep work while still remaining highly versatile for everyday kitchen use.

At the core of the blade is Blue Super carbon steel, one of the most respected high-performance Japanese steels available. Blue Super is prized for excellent edge retention, refined cutting feel, and its ability to take an extremely sharp edge while maintaining long-term cutting performance. Stainless steel cladding helps reduce maintenance while preserving the responsive feel and cutting characteristics that make carbon steel knives so rewarding to use.

The blade geometry feels thin and highly efficient through ingredients while maintaining enough structure and stability for confident board work. The flatter edge profile encourages clean push cutting while the angled K-tip provides additional precision for finer detail work and more controlled tip cuts.

Available in multiple sizes, the 210mm version offers a nimble and highly versatile feel for most kitchen tasks, while the 240mm version provides additional slicing length and efficiency for larger prep volumes and proteins.

Fitted with an octagonal mono oak handle finished in traditional Yakiurushi lacquer, the knife remains lightweight, balanced, and comfortable in hand. The heat-cured lacquer deepens the natural tone of the oak while improving durability and grip over time.
