This is a great, thin, tall, robust, and carefree knife for veggie annihilation. You could have this as a tall nakiri made of carbon steel - which is nice, but not worrying about leaving a blade wet is a nice feature in a busy kitchen. The height allows you to ‘carefully’ scoop up product, and the robust steel takes away most of the fear of chipping the edge. Very happy with this knife!
