Sanai Santoku – Touroku Sakai

The Sanai series is crafted by a select group of artisans from across Japan, working under the Touroku Sakai guild. With deep roots in traditional knife-making and a focus on thoughtful design, these makers create tools that blend form, function, and lasting performance.

Santoku, meaning “three virtues,” refers to its effectiveness with meat, fish, and vegetables. Often seen as a smaller, more compact alternative to a Gyuto, this all-purpose knife is an ideal fit for everyday prep. The Sanai Santoku features a gently curved edge that supports a natural push-cutting motion and makes quick work of slicing, chopping, and mincing.

The blade is built around an AUS-10 stainless steel core, layered in 67-layer Damascus, and finished with hand-applied tsuchime hammer marks that help reduce food drag. The octagonal handle is crafted from oak and finished in Sanai, a vivid indigo inspired by traditional aizome dyeing techniques. This deep blue, 燦燦と輝く藍色, symbolizes clarity, strength, and precision, a nod to the Samurai culture.
