Sanai Gyuto – Touroku Sakai

The Sanai series represents the work of Touroku Sakai, a long-standing guild of skilled artisans throughout Japan. With roots spanning three generations, their focus on traditional methods and refined craftsmanship remains central to every knife they produce.

The Gyuto is the Japanese interpretation of a Western chef’s knife and serves as an all-purpose tool in both home and professional kitchens. With a thinner profile and balanced feel, it excels at slicing, chopping, and general prep work across proteins and produce alike.

This blade features an AUS-10 stainless steel core, wrapped in 67 layers of Damascus steel and finished with hand-applied tsuchime texture. The hammered surface helps reduce drag and keeps food from sticking during use. It’s paired with an octagonal oak handle, finished in Sanai—a vibrant indigo hue inspired by traditional aizome dyeing. This  black sapphire, 燦燦と輝く藍色, evokes the quiet discipline and timeless strength associated with samurai heritage.
