The entire blade is hand forged in the traditional Honyaki sword making tradition from only the best single piece of Shirogami (White #2) high-carbon steel. Then, the blade is differentially heat treated creating a Mount Fuji & Moon design in the Hamon line. These are top of the line knives for professional use. This Kiritsuke is multipurpose and offers versatile cutting applications making prep quick. The clipped tip drops the point which allows for precision when imparting a drag cutting technique.
Note: This knife is not stainless steel. To prevent rusting, be sure to dry the blade thoroughly and avoid exposure to acidic liquids.
