The Touroku Sakai Sumishi Ginsan 180mm Santoku embodies the balance of elegance and everyday performance. Handcrafted under the direction of Taka Kitano, this knife continues a three-generation legacy of Sakai excellence. The Santoku, true to its name meaning “three virtues,” excels at slicing, dicing, and mincing with effortless precision.

Forged using Sanmai blade construction, it features a Ginsan (Silver-3) stainless steel core, prized for its fine grain structure, sharpness, and easy maintenance. The blade’s Nashiji finish—a subtle, pear-skin texture—adds visual depth while helping food release cleanly from the surface.

Completing the design, a full-tang Western handle in rich black-ink plum color pakkawood delivers comfort and stability with a touch of refined color. The handle’s polished contours balance the knife beautifully, ensuring control and confidence through every prep task. Handmade in Sakai City, the Kuroshi Santoku is a modern expression of Japanese tradition, made for those who value performance as much as character.
