This 105mm Kawamuki is hand forged in Sakai City by dentō kōgeishi master smith Yoshikazu Tanaka, one of the most highly regarded craftsmen working within the Touroku Sakai guild. Traditionally used for peeling and fine in-hand work, the Kawamuki highlights Tanaka-san’s precision and exceptional steel treatment at a small scale.

Forged with Sanmai construction, the White #2 carbon steel core is clad in soft iron and heat treated using pine charcoal, allowing for a slower, more controlled quench. Hardened to approximately 62 HRC, the blade sharpens easily, takes a screaming edge, and delivers impressive edge life for its size.

The kurouchi finish is intentionally raw, with visible forge marks and imperfections that reflect Tanaka-san’s deliberate, low-output approach. Paired with an octagonal smoked oak (Enkoku) handle, this Kawamuki, a traditional Japanese peeling knife is designed for precise in-hand work, ideal for fruits, vegetables, and fine detail prep
