This 210mm Gyuto is hand forged in Sakai City by dentō kōgeishi master smith Yoshikazu Tanaka, one of the most respected craftsmen working under the Touroku Sakai guild. Tanaka-san is widely regarded for his ability to balance toughness, ease of sharpening, and exceptional edge life — qualities that define this blade.

Forged using Sanmai construction, the White #2 carbon steel core is clad in soft iron and heat treated with pine charcoal during quenching, allowing for a slower, more controlled transformation of the steel. Hardened to approximately 62 HRC, the blade takes on a keen, aggressive edge while remaining approachable on the stones.

The kurouchi finish is left intentionally raw, with visible scratches and forge marks that reflect Tanaka-san’s deliberate, low-volume working pace. Paired with an octagonal smoked oak (Enkoku) handle, this Gyuto delivers precise balance, powerful cutting feel, and an honest expression of traditional Sakai craftsmanship.
