This Yoshihiro Kiritsuke has a brushed finish, Japanese White Oak octagon handle with a Water Buffalo horn bolster affixed and matching White Oak Saya cover. Kiritsuke translates to cut off and refers here to the leaf shaped tip. Its unique profile and and fine point allows for a general purpose approach to prep. The blade profile has a slight curve which allows for the ability to cut sushi, sashimi and rolls with ease. Gin-san, also known as Ginsanko is a high performing stainless steel.
