Join Chef Elan Wenzel, owner of Element Knife Company, for a hands-on knife sharpening class built around real technique and practical skill.

With nearly 30 years of experience working with Japanese cutlery, Chef Elan will guide you through the fundamentals of sharpening—from understanding your knife to building and refining a clean, consistent edge. Whether you’re looking to maintain your own knives or explore sharpening more seriously, this class gives you a solid foundation.

You’ll learn how to create a balanced 50:50 double-bevel edge, refine it to a razor finish, and maintain it over time.

Classes are held in-shop at Element Knife Company in LoHi (1701 Platte St, Suite 171, Denver).

  • Stone care & knife care

  • Assessing edge condition

  • Sharpening form, stance & angles

  • Establishing and refining bevels

  • Testing for sharpness

What to Expect

  • Fully hands-on class using provided knives and stones

  • Expect to get a little messy—dress accordingly

  • Close-toed shoes require

  • A signed waiver is required to participate

  • A little patience goes a long way here. Stick with it, and it starts to click.

  • $105 per person

  • Class starts at 6:45pm at Element Knife Company

  • Up to 3 hours

  • 15% off in-store purchases on class day

 


 

Cancellation Policy

• 72+ hours before class: Full refund

• 24–72 hours before class: Store credit issued as a gift card

• Less than 24 hours or no-show: No refund or credit

• The timestamp on the email determines eligibility for refunds or credit.

Why the Cancellation Policy Exists

Each class seat reserves a spot in a small group setting. When cancellations occur at the last minute, it is usually not possible to fill that seat on short notice. For that reason, the cancellation policy above is applied consistently.
